Unfortunately, currently, you can backdate Instagram posts neither in the Instagram app nor in the Facebook Creator studio. You can only backdate Facebook posts as have shown in this tutorial:

Instagram has been constantly adding new features so it might be not a surprise that in the future you might be able to backdate Instagram posts as well. We will update this post if becomes possible to backdate Instagram posts.
Alternatives to backdating Instagram posts
So you can’t change the date of already published or new Instagram posts but you can get rid of them if you don’t want anyone to see them.
Delete the Instagram posts
The more radical solution of course is to delete the Instagram post. When you delete the Instagram photo or video, it won’t be automatically deleted. It will be moved first to the Recently Deleted folder and you can access all deleted Instagram photos or videos in it for 30 days. After that, they will be permanently deleted if you don’t restore them.
Archive the Instagram posts
